Mazapán de cerezas / Cherry Sponge Cake

Es verano y hay cerezas, lo que me hace recordar cuando las recogía del árbol con mi madre. Para ella eran todo un manjar. A mí, además del sabor, me tentaba su rojo brillante y el hecho de no comer una sin dos.

Et voilà... un "mazapán", como llamaba mi abuela a los bizcochos ligeros y esponjosos, con sabrosas cerezas de temporada.

Recién llegada de Francia... aprovecho para desearos un "Bon Appétit"

- 200 g de cerezas
- 180 g de almidón de maíz
- 125 g de azúcar
- 1 yogur de vainilla
- 2 huevos
- 1 sobre de levadura

1. Deshuesar las cerezas cortándolas por la mitad. Precalentar el horno.
2. Montar las claras a punto de nieve.
3. Añadir el azúcar a las yemas. Batir hasta blanquear para después, sin dejar de batir, añadir el yogur, el almidón de maíz y la levadura poco a poco.
4. Una vez bien mezclado, se van añadiendo las claras y se remueve toda la mezcla lentamente y con movimientos ascendentes para conservar el aire y que quede esponjoso.
5. Engrasar un molde con mantequilla y espolvorear harina para que no se pegue.
6. Verter la mezcla en el molde. Añadir las cerezas.
7. Hornear a 180º durante 30 minutos aproximadamente.

- 200 g cherries
- 180 g corn starch
- 125 g sugar
- 1 vanilla yoghurt
- 2 eggs
- baking powder

1. Pit the cherries and preheat the oven.
2. Whisk the egg´s whites.
3. Add the sugar to the yolks. Don´t stop whisking and then, add the yoghurt, the corn starch and the baking powder slowly.
4. Once it´s well-mixed, it´s time to add the whites and stir it up and down to keep the air as it will be spongier.
5. Grease a cake tin and pour the mixture into it.
6. Put the cherries in.
7. Bake it 30 minutes aproximately (180ºC).
